Sundried Tomato Dip-Duo Dishes

Have you ever had to make something for an occasion when you really were not in the mood?  Sometimes you just don’t feel like cooking.  Especially when you were looking forward to some well deserved lazy time.  There is power in your energy when you’re cooking.  In Like Water for Chocolate, Tita made it clear that if she wasn’t feeling it, no one else would either!  When you cook begrudgingly, it’s not so fun.  We have our own ways to make something fast when we’re not up to it.  Here are two:  pick something that works at room temperature or chilled and make sure it can be made ahead of time.  That means you can get it ready hours, if not a day or two even, before the occasion, pop it in the fridge and move on with your life.  There’s nothing we love more than that.


First of all, dips are great room temp or cold.  Second, most dips will not take more than 10 minutes to make.  Third, all cold dips taste better once the flavors have had a chance to marry.  In other words, they are perfect in moments of laziness.  Dips are great ways to use up extra herbs too, so if you have bits of greenery sitting idle in the fridge or freezer, chop them up and stir them in.  Here’s a quick and simple dip you can finish in minutes, even if you really don’t want to bother.

Sun-dried Tomato & Basil Dip – Serves 6 to 8
1 1/2 cups light sour cream
1 tablespoon mayonnaise
2 cloves garlic, minced
4 sun-dried tomato halves, minced
6-8 leaves fresh basil, chopped
1 tablespoon fresh parsley, chopped
1 tablespoon fresh chives, chopped
Juice of 1/2 lemon
Kosher salt

1.  Whisk sour cream, mayonnaise and lemon juice until smooth.

2.  Stir in lemon juice, garlic, tomatoes, basil, parsley and chives.  If desired, salt to taste.
