Spinach and Swiss Chard Pasta-Duo Dishes

Have you ever wanted to try something so badly but when presented with the opportunity you blank?  Swiss chard has been on the ‘to-try’ list for a very long time.  We kept running into it in recipes and in the market.  It’s a gorgeous vegetable, a bit entrancing with its deep green foliage and reddish-pink backbone.  We finally just picked up a bunch from the store and dropped it into our basket.  There.  It was done.  Well, almost.  We still had to cook it, but we had no idea where to start.  Things that make you go ‘hmmm…’, right?
Like most of our recipes, this one was put together based on what we had to work with already.  It’s a pretty light list of ingredients, which makes it a keeper for the midweek meal.  Plus, it adds a few extra nutrients to the typical pasta dish.  Be sure not to overcook the greens.  That’s what keeps all of those good-for-you vitamins alive and kickin’, along with maintaining the bite of the chard.

Spinach and Swiss Chard Pasta – Serves 4
1/2 pound rotini pasta, cooked (save water)
1/4 cup pasta water
1/2 red onion, minced
3 cloves garlic, minced
1 bunch swiss chard, sliced
2 cups baby spinach, sliced
1 1/3 cups tomato pasta sauce
1 1/2 tablespoons heavy cream
1 teaspoon red pepper flakes
Olive oil
Kosher salt

1.  Heat a swirl of olive oil in a pan on medium high heat and add onions and garlic. Cook until onions soften, approx. 3-5 minutes.

2.  Add chard and spinach, along with pasta water and cook down until greens just begin to wilt, approx. 1-2 minutes.

3.  Add pasta sauce, cream and red pepper flakes. Stir well.

4.  Fold in cooked pasta until combined. Salt to taste.

  1. Wouldn’t have the slightly clue what to do with with Swiss chard either. Well, maybe sautee it with garlic, but you can pretty much do that with any greens 🙂

  2. Oh I am a definite chard fan. I grew rhubarb chard last year and am trying regular swiss chard (which I think is tastier) this year – I just pray that the slugs and snails don’t chomp it all first 🙂

  3. I love the Swiss chard, and recently started sauteing it with a bit of anchovy, hot pepper flakes, and olive oil. Delish!

    When I first started preparing them, everyone told me to cut out the fibrous stems. I recently attended a braising class, and the instructor, from Italy, had us braise these stems, and we served them up over polenta later. Now, nothing was wasted. The braising softened them up nicely. and best of all, they were yummy.

  5. I love rainbow swiss chard. My favorite ways are gratin with gruyere or jarlsberg or in soup with a little browned bacon and lentils. I’ve never had it in pasta, but I love leafy greens so I’ll definitely be trying it the next time I get my hands on some chard.

  6. I’ve never had Swiss Chard, but then again, I’m not a big fan of veg. I won’t know what to do with it either. The pasta dish looks amazing though!

    We love chard. It’s one of our favorite side dishes — sauteed with onion and garlic. Interestingly enough, it’s our “go to” side with enchiladas. 🙂 Not what most would see as authentic… but I’ve been doing some reading, and Lamb’s Quarters are fairly common in Mexican cuisine… so maybe this green isn’t so far off-base!!

  8. Swiss chard is one of my favorite veggies. I love it just chopped up, and sauteed with olive oil and garlic. It’s also great in vegetable soups.

  11. I have bought it before, but it’s been the usual saute-with-garlic-and-oil for me. It’s a little dull that way and I need to get it out of my comfort zone. This recipe is just hte thing.

  13. I love Swiss chard. I saute it with garlic, olive oil and chili flakes and then put it on homemade (or not) pizza dough with mozzarella, parmesan cheese and sometimes hot Italian sausage. It is soooo good. This pasta looks fabulous

  14. I grew up eating lots of Swiss chard. Fortunately, I love it! I often make a stew with it using olive oil, a little chicken broth, garlic and white beans. Sometimes, I slice some Italian sausage in it too.

    Your pasta dish looks great! Very creative!

  15. I’ve only recently discovered a love of kale but Swiss chard was next on my list! I could definitely go for it in this kind of dish. Somebody hand me a fork . . . !

  20. Great creation! Unfortunately, swiss chard is not one of my favorite greens… along with bok choy and escarole. I can’t get into them even though I’ve tried them so many different ways. Maybe I could just use extra spinach to make this!

  21. Mmmm, I love swiss chard! My brother grows a ton of it in his garden and by the end of summer we’re knee deep it in! I like it so much I often just saute it in a bit of olive oil with some garlic, crushed red pepper flakes and some chicken stock – then serve it as is. Its delicious!

    I love it with any kind of past as well – and this one looks excellent. Perfect for a week night meal.

  22. it sounds like you didn’t like it. I’m not the biggest fan of swiss chard so I wouldn’t have a clue what to make with it. But I’m sure someone in the house will eat it, since it has pasta in it. LOL

  23. Ooh, I love me some swiss chard. Ever since those Neely’s did a recipe on their show I’ve been hooked. My mom made sauteed some with turnip greens the other day and I had to slap her. Hmmph!
