Coconut Cupcakes-Duo Dishes

Ina Garten rocks our socks.  She spends her life between Manhattan and the Hamptons, she’s hanging out with Jeffrey and friends for lunch, her food always looks amazing.  How can you not want to be her best friend?  Many folks know her as Barefoot Contessa, but from time to time, we like to just refer to her as Ina.  Do we know her like that?  Of course not!  It’s just something about her way of relating to you each time you see her brown bobbed head on TV that makes you feel like you know her.  We would like to adopt her into our family.  Or maybe she will take us under her wing and invite us out for sour cream coffee cake and whipped hot chocolate.  We can dream!  In the meantime, we can give a few of her tried and true recipes a whirl and hope she’d approve.

Apparently these cupcakes were the hit of her store.  At least that’s what we read in The Barefoot Contessa Cookbook.  They were a hit with us too.  Of course, we made a couple of changes, starting with halving the quantities and reducing the sugar and coconut a bit.  We also added a hint of lime and ginger to the cake itself and omitted the almond extract in the frosting.  No matter, they were nothing but delicious.  Ina, if you see this, just know we want to hang out.  And we’ll bring the cupcakes!

Coconut Cupcakes – 1 dozen (adapted from Barefoot Contessa)

12 tablespoons unsalted butter, room temp
3/4 cup sugar
2 eggs, room temp
3/4 teaspoon vanilla extract
3/4 teaspoon almond extract
1 1/2 cups flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon kosher salt
1 teaspoon ground ginger
Zest of 1 lime, minced
1/2 cup buttermilk
4 ounces shredded sweetened coconut, plus more for rolling

1/2 pound cream cheese, room temp
12 tablespoons unsalted butter, room temp
1/2 teaspoon pure vanilla extract
3/4 pound powdered sugar, sifted

1.  Using an electric mixer, cream butter, zest and sugar until fluffy, approximately 5 minutes.  Add eggs one at a time followed by vanilla and almond extract.

2.  In a separate bowl, mix flour, baking powder, baking soda, salt and ginger.  Starting with dry ingredients, alternately add to creamed butter along with buttermilk, ending with dry ingredients.  Mix until just combined. Fold in coconut.

3. Spoon batter into lined cupcake tins and bake in a preheated oven at 325 degrees for 25 to 35 minutes, or until the tops are brown and cake bounces back upon touch. Take tray out of the oven, cool cupcakes 10 minutes in tins, then remove and cool completely on a baking rack.

4.  When ready to frost, beat cream cheese, butter and vanilla together until smooth.  Sift in powered sugar and mix until well combined.

5.  Frost cupcakes, and if desired, roll in extra shredded coconut.

  3. Interesting. I’m an almond extract junkie – literally – but I might have had the same thought about omitting it, given the coconut.

    These cupcakes look like they would be just perfect for an after-school snack!

  4. I am also a big fan of Ina’s food, and she is one of the few remaining people on Food Network who is a real food professional, so extra points for that. And I looooove coconut goodies, so these are right up my alley. I also like that you lowered the sugar… no need to go into diabetic shock just for a cupcake!!

  9. I have never made anything by Ina Garten, which is ridiculous since I have watched her shows so many times at the gym. Her food is just so classic that you know it has to be delicious. Your cupcakes look so pretty.

    I love coconut so I shall have to make these. I like your changes a lot as well!
