Tomato & Mozzarella Salad-Duo Dishes

The bounty of our Farm Fresh to You treats is slowly, but surely dwindling.  Although they’ve kept well in the fridge and pantry, there’s no way we want our goodies to go bad before we can eat them all.  We’ve each come up with a few ways to use all of the lettuce, tomatoes and apples, which we’ll slowly but surely share over the next few weeks.  There have been simple eats like no fuss grilled chicken salads, and even simpler yet…apples eaten as a midday snack.  No fixins involved.  The great thing about having this fresh produce on hand is that you can make easy mails or snacks quickly, and the end result is always worth the time spent.  Even better, whipping up fast dishes with produce can be done in little time.  We’re busy bees, so when there’s a fast fix, we’re in the fan club.

In an effort to shy away from a very traditional tomato mozzarella salad, we opted for the fresh bite of parsley as opposed to basil, and the balsamic vinegar has a deepened sweetness with a dab of honey and cinnamon.  Easy, breezy, beautiful meal for two.  Of course, you can dress it up or dress it down as you please.  The final outcome is up to you!

Tomato & Mozzarella Salad – Serves 2

2 large heirloom tomatoes, cut into eighths
3 ounces mozzarella cheese, sliced
1/2 cup balsamic vinegar
1/2 tablespoon honey
1/4 teaspoon ground cinnamon
2 tablespoons fresh parsley, chopped
Olive oil
Kosher salt

1.  Pour balsamic vinegar into a shallow pot and mix in honey and cinnamon.  Set to medium high heat and cook down until thickened, approximately 5-7 minutes.

2.  Mix tomatoes and mozzarella in a medium sized bowl and sprinkle with parsley.  Drizzle with a bit of olive oil, balsamic glaze and salt to taste.

  3. I’m intrigued by the balsamic in this. When we were in Tuscany I bought some balsamic that had been aged a really long time from the Verazanno winery – $60 for 4 oz. It was fabulous!! Very thick and rich. I haven’t found any in the US like it. Will have to try cooking it down like you did and see if it comes close.

  4. I love a traditional tomato and mozzarella salad. It’s so simple I often overlook making it at home but it gets ordered constantly when out.

    Yesterday I had some leftover baked potato wedges, baked carrots, fresh salads leaves and plum tomatoes that needed to be eaten (leftovers from making lunchboxes) and I made salad from it, little bit of oil, balsamic and almond flakes made it really nice 😉 It was only enough for 1 person but I will make it again and post about soon.

  7. Since we started to receive organic veggies and fruits every fortnight, we are getting very good at the “use it or lose it” way of thinking. This looks lovely and if we had not just used all our tomatoes up for our BLT from scratch reveal dinner (last night – check my blog for a writeup!), I would so be making this today.

  8. What an interesting twist to add honey and cinnamon! I bet it would work great for not so ripe tomatoes.

  9. It would DEFINITELY be tragic if your veggie/produce stash went bad! Having fresh goods around definitely makes for quick and easy meals. They are the best muse.

    I really like your variation on a caprese salad, the vinaigrette sounds especially unique.
