Meghan’s Test Kitchen

Here’s the first Test Kitchen of 2010! And it comes from another Tar Heel and UNC alum. Meghan was Amir’s roommate when they first moved to the great Los Angeles. Today, she brings you a family dessert. We’ve been very fortunate to try it at past dinner parties, and let us be the first ones to say, it is go-oo-ood!

My mother first made Chocolate Chip Pie on a Cloud when I was in elementary school. I have no knowledge of where the recipe originated or how it came to be a part of my limited cooking repertoire. But time and time again, this pie has been the only shred of evidence in my ongoing efforts to prove I can “work” the kitchen, i.e. put something in the oven, and have people actually want to ingest what comes out.

When I was 10, I memorized the recipe and went to my best friend Lyla’s house. Together, we made the pie in her parent’s kitchen. Lyla and I were competitive in every aspect of pre-adolescent life, from whose feet were larger to who was taller to who could run faster (always her). But when it came to our common desire for chocolate chip goodness, we were suddenly on the same team. At the time, I couldn’t remember how many eggs to put in the pie, so I guessed and threw in four. We cooked, we ate, and we momentarily got along. I fondly remember sitting in her parent’s kitchen, heartily shoving chocolate deliciousness into my face.

Recently, I decided to make the pie to show off baking prowess at the workplace. Sampling it in front of several co-workers– just to make sure it was as good as I remembered– I was horrified by what I tasted. It was thick and dry and resembled cheesecloth, not food. I screamed, cut it up and threw it away, only letting my co-worker Chad — who has few requirements for what he considers edible– try the pie. He nodded, mouth full, muttered and walked away. I could tell that even he had to draw the line somewhere.

It wasn’t till weeks later I realized there was something wrong with the oven in my apartment. Since pie is one of two items I make, I had no comparison for my baking failure and figured I’d just lost my touch. I flew home to NC this past Christmas and tried again, this time for my family. In my parent’s oven the pie turned out perfectly, and my family was very impressed with my limited though consistent baking skills. Now I just have to prove myself to my co-workers.

Chocolate Chip Pie on A Cloud-Serves 6 to 8
2 eggs, beaten
1 cup sugar
1/2 cup butter or margarine, melted and cooled
1 teaspoon vanilla
1 cup flour
1 cup chocolate chips
1 cup chopped walnuts or pecans, optional
1 prepared pie shell, unbaked
Whip cream

1. Preheat oven to 350 degrees.

2. In a large bowl, combine beaten eggs, sugar, melted butter, and vanilla. Stir well.

3. Stir in flour and mix until combined.

4. Add chocolate chips and stir well. (I never put them in.)

5. Pour into pie shell and bake for 30-40 minutes or until a toothpick inserted in the center of the pie comes out clean.

6. Serve with whipped cream on top like a cloud.

    That pie looks scrumptious! Definitely something I wouldn’t mind taste testing!

  2. Fantastic pie!! I tend to have the same problem with my oven sometimes, too. I’m glad the pie came out perfect the next time around. Delicious!!
