Is the sandwich underrated? Maybe you hold it in high regard, but over here, it doesn’t get too much attention. That is a shame because two slices of bread can deliver a world of wonder to your lips. When you’re home and want to create an easy lunch, the sandwich is your answer. You can give it a fancy touch or keep it plain and simple. Eat it warm or keep it cold. Pack it with a ton of fillings or leave it slim and defined. With its mix of carbs, protein and of course a little fat, the sandwich delivers just about everything you need to fuel yourself for the day.
If you end up with two packs of smoked salmon in your fridge because someone else is already bringing salmon mousse to a party, you have to come up with an alternative use. Quickly. Neither one of us likes to waste food, so this seemed like a great way to make sure of the bounty. It is a play on traditional cream cheese and cucumber tea sandwiches. Smoked salmon, fresh herbs and sweet, warm onions add another level of depth to this layered midday (or midnight) meal.
Smoked Salmon and Caramelized Onion Sandwich – Serves 4
1 large red onion, sliced
1 tablespoon unsalted butter, plus more if necessary
6 ounces smoked salmon
1 Persian cucumber, thinly sliced
Fresh dill, chopped
Fresh chives, chopped
8 slices wheat bread
1. Put the butter in a shallow, wide pan. Once melted, add the onions and cook over medium high heat. Toss in butter to coat and dash with a bit of kosher salt. Turn the heat down to low, cover and cook for 30-40 minutes or until browned. Stir occasionally. (If you need to add a little more butter to keep the onions from sticking, go for it.)
2. Once onions are browned, remove from heat and set aside. Lightly toast the bread slices and spread a thin layer of cream cheese on each one. Top four slices with a healthy sprinkling of fresh chives and dill followed by a few slices of cucumber, salmon and finally onions. Lay the remaining slices of bread on top.
