Sweet and Savory Never Get Old

Caramelized Peach and Bacon Pasta-Duo Dishes

At our cocktail party after the beach seafood boil a couple weeks ago, we wanted to have an easy dish to serve up to our guests. You may be wondering how they even had room left in their bellies after an afternoon of crab, shrimp, mussels and lobsters. Well, trust us, there’s always room. Having just received several sample bottles in the mail from Girard’s Salad Dressings, we thought a cold pasta salad would do just the trick. We could prep all of the ingredients individually and just toss them together just before serving. We decided to use the Peach Mimosa Vinaigrette because it was one of the most interesting varieties amongst the group. The dressing is sweet, but not overwhelmingly so, and we thought summertime peaches would pair beautifully with it. From there, everything just fell together in unison.

This salad combines the sweet and savory aspects that we enjoy frequently and share often through this website. Caramelized peaches, crisp bacon, bright basil and fresh mozzarella work very well together if you didn’t know. In the end, they created a very easy salad that still tastes good hot or cold. Lucky for us, we already had the pasta boiled, peaches and bacon cooked and mozzarella sliced prior to the party, so all we had to do was toss in the basil and drizzle dressing throughout. Mission accomplished! You can even mix everything together the day before. The flavors will meld even better, and there will be nothing to do the day of other than plate and go.

Caramelized Peach and Bacon Pasta – Serves 14 to 16
2 pounds penne pasta, cooked
1 1/2 cups Girard’s Peach Mimosa Vinaigrette
1 pound bacon, cooked and chopped
6 medium peaches, peeled and thinly sliced
2 tablespoons unsalted butter
2 tablespoons brown sugar
1 tablespoon rum
1 medium red onion, thinly sliced
12 ounces fresh mozzarella, sliced*
10 large leaves fresh basil, sliced
2 tablespoons black pepper
1 1/2 tablespoons kosher salt

1. Melt the butter over medium heat and add the peaches. Sprinkle the brown sugar and rum over the fruit and cook until they begin to brown and the sugar thickens, approximately 5-10 minutes. Remove from heat and set aside.

2. Pour the pasta into a very large bowl and toss with the dressing, salt and pepper. Fold in the cooked peaches, bacon, onion, mozzarella and basil.

*Another great cheese for this salad is gorgonzola. A little goes a long way, so try sprinkling 1 1/2 cups of sharp gorgonzola throughout, and you’re guaranteed a mix of sweet and tangy.

  1. My favorite salad dressing is sundried tomatoe vinagerette! This pasta sounds good! The salty bacon would pair well with th sweet peaches.

    Love the use of the peachy salad dressing too, I’m seriously drooling. My favorite salad dressing is any kind of ranch. Homemade, bottled, whatever. I love the stuff!

  3. This is my favorite photo ever on your site. My favorite salad dressing would have to be olive oil and champagne vinegar, of course, next to a dressing with $100 balsamic, but I don’t get to enjoy too much of that one.

  4. Mmmm… even better than mozzarella is burrata with peaches.

    As for the dressing, I love papaya seeds. Whiz the usual vinaigrette up in a blender with papaya seeds and you’ve got a sweetish dressing perfect for peppery greens like arugula.

  5. Very fun. I love sweet and savory dishes myself so this sounds right up my alley. I bet the bacon balances out the fruit quite nicely.

  6. What a delicious pasta salad. I’m not into conventional pasta salads. Macaroni salads made from elbows and mayo and maybe some chopped carrot and celery are BO-RING. The spirals with the raw veggies and bottled Italian dressing aren’t much better.

    I’d eat this one in a heartbeat though. Interesting flavors, fun dressing, fresh fruit and BACON (and BOOZE). I’m all over this.

    I love just a simple simple blend of olive oil, vinegar, and salt and pepper. Maybe some oregano or basil. That’s it!

  11. I made a cantaloupe and bacon pasta last year that was fantastic…and given how much more I love peaches than cantaloupe…this really sounds even better!

  12. This salad sounds delicious and now I want to go out and pick up the ingredients to make it! Salty and sweet is wonderful together and I don’t do it often enough. I’ll try this! We eat salad all the time usually with a good homemade olive oil and balsamic vinegar. I also have a wonderful Parmesan mayonnaise vinaigrette dressing that I use for summery pasta salads.

  13. I would have to say my favorite is a raspberry vinagrette or the poppyseed dressing at Cafe Carolina on their signature salad. You have to try it next time you are in NC Amir =)

  14. Love sweet and savoury combos and this idea of mixing peaches and bacon! We generally make our own salad dressings with our regular mix being extra virgin olive oil, balsamic vinegar, and salt and pepper.

  16. This sounds like the best flavor combo ever! I’m about ready to go into my kitchen and slice a peach and top with bacon! I’m a sucker for caesar dressing, but I also love gorgonzola pear with riesling from Vino de Milo!
