Simple Works

Not everything in life has to be complicated. As self-proclaimed foodies, we like to spend time in the kitchen trussing chickens, making sausage from scratch, whipping up dishes with truffle flavored foie gras, or serving picturesque baked delights (French macarons anyone?). On the other hand, we’re not ashamed to admit there are times when we succumb to semi-homemade cooking and eating. Perhaps our eggless ice cream from last week will come to mind. We don’t care if you judge us! The easiest treats can sometimes make you forget about all of those fancy dishes.

Sweet endings seem to be our favorite way to incorporate ready-to-go, off-the-shelf products into our food. This recipe was sent to Amir by a coworker, and there was really no discussion about changing it around when the time came to make it. We could have gourmeted it up somehow, adding our own signature twist to the dish like we love to do, but we wanted to experience this mouthwatering dessert as originally presented by Jessica of How Sweet It Is. Although Trader Joe’s has an unbelievable dark chocolate peanut butter cup, there’s just nothing quite like an iconic Reese’s to satisfied a sweet fix. Plus, if there is a chance to throw in some Rice Krispies into a dessert, why mess with a proven good thing? The final product was a homerun. Amir described it as an OMG-this-is-so-good, are-you-kidding-me kind of treat. Next time, perhaps white chocolate will be a nice substitute. These brownies couldn’t have been easier to execute. Even the proudest of foodies will love them.

Crack Brownies with Reese’s Peanut Butter Cups and Rice Krispies Cereal – Serves 12
Inspired by How Sweet It Is
1 package brownie mix
1/2 cup lightly salted peanuts, roasted
1 cup chopped Hershey’s® REESE’S® Peanut Butter Cups
1 1/2 cups milk chocolate chips morsels
1 1/2 cups creamy peanut butter
1/2 tablespoon unsalted butter
1 1/2 cups Kellogg’s® Rice Krispies® Cereal

1. Make brownies according to package instructions in a 9″ x13″ baking dish. Remove brownies from the oven 5 minutes before the end of the instructed total cooking time. Sprinkle evenly with peanuts and peanut butter cups. Return to oven and bake for the remaining 5 minutes. Set aside and let cool 2-4 minutes.

2. As brownies finish baking, melt chocolate chips over a double boiler or in the microwave. Stir in peanut butter and butter until mixture is smooth, then fold in the cereal. Gently spread mixture over cooked brownies. Cover and refrigerate for 2 hours or up to overnight before serving.

  1. Yes you are right! Sometimes we need to decompress with some nice and easy cooking… Let’s complicate ourselves with hard cooking for special occasions, don’t you agree? I love the photos of your brownies. Do you advice any sauce with the brownies?

  3. I’m with LAURA on this… where are the rice krispies???? Do you add them to the batter??? add them for the last 5 minutes of cooking??? or add them with the melted chips at the end??? I”m lost here…

  4. Totally agree that things don’t have to be complicated to be amazing!If I didn’t not like peanut butter (insert *gasp* here) I’d be all over these…Perhaps sub for a milky way??? yummmmmm!

  5. I have to make these. They sound incredible. One question though… where do I put the Rice Krispies? Do I keep missing that step in the directions?

I think this is sort of funny because people will say i am out of my mind for making my own stock, broth, bread crumbs, ect… but when i post something simple or use herb “not out of my garden” they really look at me wierd… I mean come on.. we all make the easier stuff, and sometimes it really suprises us…. these look absolutly delish!!!

  9. These look and sound great, except for the fact I just cannot get a taste for hershey’s chocolate. Really don’t like it. The thought of peanut butter cups excites me as does the final treat.
